FOOD SERVICE SAFETY AWARENESS

"Please Pass the HACCP" is a safety awareness program designed to refresh the minds of even the most hardcore veteran to the potential hazards found in the food service industry. Some key points found in this program include a close examination of employee attitudes/behaviors which may place themselves (and others) at risk, a universal plan to eliminate critical situations known as behavioral observation and feedback, and a motivational component to encourage employees to follow procedures and guidelines.

SAFETY FIRST?!
A food service employee at an educational institution expresses his concern regarding the apathetic attitude regarding safety he has seen around campus. He fears that tolerance of unsafe behavior in other departments may soon affect the way things are done in the kitchen.

INGREDIENTS
Everybody wants it special today! Everybody wants it a certain way today! Everybody wants to know what's in it today! This scene illustrates that product knowledge is not only important to good service, but health and safety compliance as well.

A LITTLE COOPERATION
A food service director emphasizes the need for cooperation from the staff and administration. She is afraid that their new, highly sophisticated menu combined with recent budget and staff cut-backs could jeopardize the department's perfect safety record.

WOLF AT THE DOOR
The "ABC's" of safety are explored, using the proverb of barring the wolf from your door as a metaphor.
This scene inspires greater employee adherence to policies and guidelines.

PICNIC
This poignant vignette drives the point home that a lapse in food safety can easily cost lives. A young mother recounts the death of her own child after she had accidentally fed him tainted hamburger.

SEVEN STEPS
Believe it or not, the seven steps of HACCP can be presented in an entertaining fashion!
